Egg Nog Glazed Spritz Cookies

Isn't that a fun blog name....LOL

Since these are a grown-up cookie I opted out of the sprinkles for decoration and simply gave them a light dusting of freshly grated nutmeg while the glaze was still wet. I think these would be the perfect cookie for an elegant New Years Eve party. Don't hesitate to try them folks!

Egg Nog Glazed Spritz-from Land O Lakes
1 C butter, softened
2/3 C sugar
1 egg
1 Tblsp vanilla-yep, a tablespoon
2 1/4 C A/P flour
1 tsp ground nutmeg-freshly grated is best

Glaze
1 C powdered sugar
1/4 C butter, melted
*1/4 tsp rum extract
*1-2 Tblsp water-however much needed to achieve desired thickness
  1. Cream butter, sugar, egg and vanilla.
  2. Add dry and mix well.
  3. Fill press, form cookies on ungreased baking sheet.
  4. Bake at 375 for 8-10 minutes, or until done.
  5. Remove from cookie sheet and while still warm, brush with glaze:
  6. Mix first three glaze ingredients in a bowl and add as much water as necessary.
  7. *I just used the sugar and butter, then added rum until I got a consistency I liked (less than 1 Tblsp).
  8. Brush over cookies.
  9. Optional-Decorate with sprinkles. Highly recommended-add an extra grating of nutmeg.

I never eat breakfast....I know it is the most important meal of the day. So that is where I am beginning. It really is hard to re-adjust eatting habits. I have loaded my purse and desk with quick to grab snacks. Like pretzels, wheat crackers, cheeses and fruit. I would love to hear from any of you that are good at this because I would love any help I can get! I have been looking at all my cookbooks for EASY recipes. I have decided I really like protein drinks...they are fast and easy! If you do them right they are very good too! I really like Curves vanilla protein drink. I mix it with orange juice, a little milk, 4 to 5 ice cubes, 1 banana and a few strawberries. Yummmm! If you have any great drink recipes I would love to try them.

Another "Mix in a Jar" Recipe

I am loving the "Mix in a Jar" recipes. I think they make great gifts. If you are in Utah, I went over to Roberts our local craft store and got the cutes jars with gingerbread guys on top to do my mixes in. They are are on sale right now so they aren't to expensive.
I did a few of the following:

Chocolate Chip Coffeecake Mix
You will need a 1 one-quart wide-mouth jar. The wide mouth makes it easier to layer.
1 and 1/2 cups all-purpose flour
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips
3/4 cup brown sugar
1/2 cup chopped walnuts or pecans
In a medium bowl, sift the flour, sugar, baking powder, baking soda and salt. Pour flour mixture into the jar.Layer the following ingredients on top of the flour mixture: brown sugar, chocolate chips and chopped nuts.Put on lid and seal the jar.

I like to make a recipe card to attach to the jar their cooking instructions on it.
Chocolate Chip Coffeecake
1 jar Chocolate Chip Coffeecake Mix
· 3 large eggs
· 1/2 cup (1 stick) butter - softened
· 1 teaspoon vanilla extract
· 1 cup sour cream
Preheat oven to 350 degrees. Prepare a 12" x 12" (or similar) baking pan with a generous coating of cooking spray. In a large bowl, beat the eggs, butter and vanilla extract together until well-blended. Add the coffee cake mix and sour cream and mix until well blended.Pour the batter into the prepared pan. Bake 25 to 35 minutes or until a toothpick inserted into center comes out clean. Serves 12.
Allow coffee cake to cool at least 10 minutes before cutting or eating.

National Tie One On Day™ - November 26,2008

National Tie One On Day™ celebrates the humble apron and the spirit of women of earlier generations who donned the universal symbol of home, family and mothering as the uniform of their daily wardrobe and helped make America the great country it is today. On the day before Thanksgiving, EllynAnne encourages us to pause in the preparation of our own meal, wrap a loaf of bread in an apron, tuck a prayer or note of encouragement in the pocket, and tie one on...an apron, of course!, and deliver the wrapped bundle to someone in need of spiritual or physical sustenance. According to EllynAnne, no matter which way you turn out of your own front door, someone who is deserving of a hug is very close by. “Women clad in aprons have traditionally prepared the Thanksgiving meal,” says EllynAnne, “and it is within our historical linkage to share our bounty.”For More Information, email EllynAnne or call 1.877.9.APRONS

I thought this was not only a fun idea but what and nice thing to do for someone! So I hope you consider joining in. Everyone I know loves banana bread so I thought I would share the recipe:
Banana Bread
1 1/4 cups sugar
1/2 cup butter or margarine, softened
2 eggs
1 1/2 cups mashed very ripe bananas (3 to 4 medium)
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups Gold Medal® all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts, if desired
1. Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.
2. Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.
3. Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing.
Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.
