Pickled Perfection!

It was a fun canning day with my Daughter Darcey and my Son's girlfriend Jesse. I decided to try doing pickled veggies. After having them at a few restaurants I thought...We can do these!!

We did mushrooms cut in half.

Sliced red, green and yellow bell peppers. And cut carrots.

Green beans...

Cauliflower and not pictured red and yellow onions, zucchini,
yellow crocked squash and pickled cucumbers.
Sounds yummy so far...


This is our herb mix for each jar. So we are almost ready to start.
We washes the jars and boiled the lids
Here's the recipe we used;
Pickled Veggie Perfection
9 lbs. veggies
green or red pepper pod, seeds removed
1 cup Mrs. Wages pickling & canning salt
2 quarts water
1 quart white vinegar
splash apple cider vinegar
2 heads fresh dill
1 tea. Mrs/ Wages pickling spice
3 cloves of garlic
1 tea. red pepper flakes
 pepper
Follow the directions for the brine on the Mrs Wages. We mixed the dill, garlic, pepper flakes, pepper and pickling spice together in a separate bowl. In the bottom of each jar add 1  1/2 teaspoon of dill mixture in the bottom of each jar. Layer the veggies and on top sprinkle a little more pickling spice and fill with brine. Leaving 1/2 inch from the top of the jar. Process according to directions on Mrs Wages.

After processing wait for them to cool to make sure they pop then add cute labels.
  my husband thinks I can just so I can make cute labels.
