Chicken Salad

Remember I told you about my getting a pressure cooker?
I am branching out and trying more recipes. 
I went to the "Pressure Cooking" class at the Bosch store
on Highland Dr. (if you live in S.L.C. you will know where that is)
And my favortie cooking couple Melanie and Mathew
 were teaching the class. One of the recipes was for Chicken Salad and the made this with frozen chicken breasts. So I tried it....
And it was Delious!!
So I thought I would share with you what I learned...
You need 4 cups diced cooked chicken so I used 3 frozen breasts (from
Costco so very big) I used 1/2 cup water and 1 teaspoon boullion.
You bring it to high pressure and cook 9 to 12 minutes.
This depends on how
frozen the chicken is. When done dice or shread.
Now in a large bowl mix:
1/2 cup mayonnaise
1 tablespoon lemon juice (more if you want)
1 teaspoon dried tarragon
salt and pepper
Mix in the bottom of bowl and you will only dirty 1 bowl.

Add 1 cup diced celery
1 to 2 cups seedless grapes ( red with walnuts & green with almonds)
1 cup toasted nuts you choose
1/2 cup diced yellow onion
4 cups cooked chicken

Now mix all together and enjoy!

I hope everyone had a wonderful Valentine's!
 I amd trying to find an easy but yummy crockpot recipe to put on this weekend.
I really want to quilt and there is nothing better than have the house
smell like I am cooking up a storm when I am not! I have read thru a ton of my cookbooks and nothing sounds good. Do you have any ideas.....

Happy Valentine's Day!

Valentine Chex® Mix
9 cups Rice Chex® cereal

1 cup white vanilla baking chips

1/2 cup peanut butter

1/4 cup butter or margarine

3/4 cup powdered sugar

1/2 cup red, white and pink candy-coated chocolate candies

1/4 cup red or pink jimmies sprinkles

1. In large bowl, place cereal. In small microwavable bowl, microwave baking chips, peanut butter and butter uncovered on High 1 minute to 1 minute 30 seconds, stirring every 30 seconds, until melted and smooth. Pour peanut butter mixture over cereal, stirring until evenly coated.

2. Place 1/2 of the cereal mixture in 1-gallon food-storage plastic bag. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper or foil to cool, about 15 minutes.

3. Meanwhile, stir candies and sprinkles into remaining cereal mixture. Spread on waxed paper or foil to cool, about 15 minutes.

4. In serving bowl, mix both cereal mixtures. Store in airtight container.

Pressure Cookers are so much Pressure!!

Oh the pressure....I am old school when it comes to these....I was raised you stay away from the stove when Mom was using the preassure cooker. I have been going to Melanie's Cooking Classes for at least 2 years now and she is always using hers. After 1 year I finally got brave enough to buy one....a few months later I was brave enough to open the box and start reading the manual.....That took a month....I have now mastered "Carrots". And my carrots are to die for! It really has taken alot to get me past by fear and over the weekend I used it for 3 other recipes....YES I branched past carrots!  I did Manhatten Clam Chowder in it and it took ...with prep time 30 minutes from start to finish! So I have now decided I love this pan! I did follow Melanie's suggest and bought a Kuhn Rikon. It really is easy its just passing the fear! LOL! Let me know how you like your if you have one!
