Apple Cinnamon Bread

Apple Cinnamon Bread

cooking spray
2 cups all-purpose flour
6 Tbsp Splenda, granulated *
2½ tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
¼ tsp table salt
¼ tsp ground nutmeg
¾ cup low-fat buttermilk
¼ cup packed brown sugar
2 Tbsp reduced-calorie margarine, melted
¼ cup liquid egg whites or Eggbeaters
2 Tbsp fresh lemon juice
1 tsp vanilla extract
1½ cup shredded apple, packed coarsely (Approx. 1 large apple)
2 tsp lemon zest, finely grated*

Preheat oven to 350ºF. Coat an 8-inch loaf pan (or 2 mini loaf pans) with cooking spray. Peel and shred apple. Grate lemon zest. Set aside. In a large bowl, combine dry ingredients: flour, Splenda, baking powder, baking soda, cinnamon, salt and nutmeg. Mix well with a fork and set aside. In a medium bowl, whisk together wet ingredients: buttermilk, brown sugar, margarine, liquid egg whites, lemon juice and vanilla extract. Stir in apples and lemon zest. Add wet mixture to dry ingredients and mix until just blended. Pour batter into prepared loaf pan (or 2 mini loaf pans) and bake until a wooden pick inserted near the center comes out clean, about 50 minutes. (Or, about 40 minutes for mini loaf pans.) Cool in pan, on a wire rack, for 10 minutes. Remove bread from pan and cool completely. Slice into 8-10 slices and serve.

Kitchen Towels

I love making dish towels....I know you have heard me say this before.....but I really do love making them. And this time of year I love to pull out some of my favorite ones. This one is one I made for my coobook http://quilterscookbook.com/ And I really had fun making it. The pattern is in the cookbook. Gingerbread boys and girls are one of my favorite. I was thinking of doing a whole tree for my kitchen in them. Wouldn't that be cute. I am looking so forward to putting up a tree. I think I will put up my tree with only light before Thanksgiving. And then the day after I can trim it. After all they aren't up all that long. Have a great day and stop by again!

Easy Peasy Soup

This is so easy you will love it!
You brown 1 lb of hamburger and what ever spices you like ...
I use italian seasoning.
put drained brown hamburger in crock pot with
1 can diced tomatoes with green chilies
1 can minestrone soup
1 can kidney beans
and I used I jar homemade stewed tomoatoes..you can just add another can.
Turn to low and cook about 3 to 4 hours and serve with your favorite bread.
This is wonderful ....even my picky husband said "we can have this again".
It looks like it was alot of work huh?
it wasn't....LOL


And you home will smell so good ...they will think you have been cooking all day!

The Best Pumpkin Waffles!


Doesn't it feel like pumpkin waffles! Its getting cooler outside and the leaves are changing ....fall is definitely in the air. And nothing smells better in the cool morning than pumpkin waffles.
