Cooking Swedish Pancakes with Elijah!
I love cooking with my grandkids! Elijah loves to cook with Nana and it was just deciding whats for breakfast. He looked and looked and we decide Swedish Pancakes would be yummy.
Its all in how you mix it...
These look so good....and Elijah wants the first one!
Minus 1 for Elijah....
So yummy...Elijah said we can do these again...
Swedish Pancake
4 eggs
2 cups milk
4 T. butter melted
2 T. sugar
1 1/2 cups flour
1 1/2 tea. baking powder
pinch salt
1/2 tea. vanilla
Beat eggs until thick.
Add milk then butter.
Add sugar and vanilla and mix until sugar disolved.
Add flour and baking powder and stir together. Don't beat just stir.
Pour onto buttered pan and flip when 1 side is done.
Sprinkle with powder sugar and serve.

Apple Spice Dump Cake
This is the easiest cake ever! My grandkids can't get enough of this cake. This is a great one for the kids to help with because you can't mees it up at all. And since its easy and the kids love it I thought would share....
Apple Spice Dump Cake
1 box (14.5 oz about) Spice Cake Mix
1 can ( 21 oz about) Pie Filling
3 eggs
Preheat oven to 350 degrees
Mix all 3 ingredients together just until moist. Pour into a 13 X 9 baking dish or a bundt or tube cake pan that has been greased and floured. I like to use sugar instead of flour on all cakes its just makes the cake that much sweeter! Bake for approximately 45 minutes or until a toothpick inserted comes out clean.
When cool sprinkle with powder sugar. I like to do it again on each piece as I serve it too! If you sprinkle with powder when warm it just melts into and you can't see it.

Gooey Fudge Bars
These are so good and easy to make! My favorite thing...EASY. I got this recipe from my friend Melanie who teaches the best cooking classes.
Gooey Fudge Bars
Cookie base:
1 cup butter
2 cups brown sugar
2 eggs
2 tsp. vanilla
1 tsp. soda
1 tsp. salt
3 cups rolled oats
2 1/2 cups floor
Fudge Filling:
12 oz. pkg. semi sweet chocolate chips
1 can eagle brand milk- sweetened cond. milk
2 tbsp. butter
1/2 tsp. salt
2 tsp. vanilla
* Cream butter and sugar, add eggs and vanilla, add dry ingredients, and stir in rolled oats. Set aside.
* Melt chocolate chips, milk, 2 tbsp. butter, and salt. When slightly cool add vanilla - stir till smooth.
* Grease jelly roll pan - spread 2/3 of oatmeal mixture in the bottom of the pan. Spread fudge over top. Dot with mixture and swirl over chocolate.
* Bake at 350 degrees for 15 to 20 minutes or slightly browm.
* Makes 60 2 X 1 inch bars. Keeps well.

I Love Info-mercials!
I was up late one night and Montel Williams Info-mercial came on and since I am new to pressure cooking I was hooked. I watched and since you can use it for browning, slow cooking, steam and pressure cook I thought I would give it a whirl!
I LOVE it!
I like it better than my regular pressure cooker. I have thought the recipes books were ok. All the soup recipes were a little bland, but once you figure out how to cook in it you can fix any of the recipes to your taste. Here is my version:
Chicken Soup
2 cartons (32 oz) chicken broth
2 chicken breasts cubed
1 medium onion diced
3/4 cup broccoli
1 small yellow squash
1 cup sliced carrots
2 stalks diced celery
3/4 cup bow tie noodles
1 teaspoon italian seasoning
1/2 teaspoon rosemary
salt and pepper to taste
1/4 cup alphabet soup mix
Pressure set at 50
Cook time is 20 minutes
Your soup is done!
Now since you have time try making a loaf of Artisan Bread.
Yummy!
You can get a great recipe from "Healthy Bread in Five Minutes a Day".
