French Breakfast Puffs


This Recipe is so good and easy! And they aren't a muffin or a cupcake...more like both....
Grab a cup of tea to go with them ....so yummy!
I just pretend I am sitting at a fancy Breakfast house...

French Breakfast Puffs

1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup sugar
1/3 cup shortening
1 egg
1/2 cup milk

Topping

1/2 cup sugar
1 teaspoon cinnamon
6 tablespoons butter, melted

Preheat oven to 350 degrees. Grease 12 muffin cups or line cups with paper muffin liners. In a large bowl, whisk together flour, baking powder, salt and nutmeg. In a separate bowl, cream together 1/2 cup sugar and shortening. Beat in egg. Stir flour mixture into shortening mixture alternately with milk. Beat well. Spoon batter into prepared muffin cups. Bake in preheated oven for 20-25 minutes. While muffins are baking, combine 1/2 cup sugar and 1 teaspoon cinnamon. Remove muffins from oven and muffin pan. Immediately, dip the tops of the muffins into the melted butter, then into the cinnamon and sugar mixture. Repeat with each muffin, until all muffin tops are covered. Serve warm.

Banana Chocolate Chip Tea Bread

This is so good warmed up for breakfast with a cup of cold milk or a cup of your favorite tea.
This tea bread is also a great snack or dessert.

1 1/2 cups sifted flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup butter, softened
1 cup sugar
2 eggs
1 tsp. vanilla extract
1/2 cup sour cream or 1/4 cup buttermilk
1 cup ripe bananas, mashed (about 3 medium sized bananas)

Several handfuls of semi-sweet chocolate morsels, about 2 cups (3-5 handfuls depending on how chocolaty you like it!)  Preheat oven to 350° F.
Sift together the flour, baking soda and salt. Combine butter, sugar, eggs and vanilla in a mixing bowl. Add sour cream or buttermilk, and blend together with an electric mixer (or by hand) for 1-1 1/2 minutes. Add mashed bananas to the mixture and then add flour mixture. Mix thoroughly. Add several handfuls of the chocolate morsels and mix in gently for about 60 seconds. Fill 2 greased and floured loaf pans about 1/2 to 2/3 full.
Bake 30-35 minutes.

Homemade Strawberry Jam

While Shopping at Costco last night I came across the Strawberries and decided I really wanted to make some jam. It must be getting nice out side ....LOL...And I found the easiest recipe I thought I would share:

Homemade Strawberry Jam

1 quart ripe mashed strawberries
4 cups sugar, (do not reduce the sugar)
3/4 cup water
1 box fruit pectin, available at your grocers
Plastic storage containers (these need to be cute to help make the whole experience)

Measure 2 cups mashed strawberries into a large bowl. Stir in sugar and let stand for 10 minutes.
In a small saucepan, bring water and pectin to a boil, stirring constantly. Let the mixture boil for one minute while continuing to stir.
Combine fruit mixture with pectin mixture. Stir until all sugar is dissolved (about 3 minutes). Add the remaining strawberries to this mixture.
Fill the plastic containers to within 1/2 inch from the top. Cover with lids and let stand at room temperature for 24 hours.
Refrigerate up to 3 weeks.
This jam can be frozen for up to one year.

Corn Dog Casserole


This was another easy recipe and it took maybe 10 minutes to prepare.
There is nothing better than fast, easy and yummy!

Corn Dog Casserole
1 tablespoon butter
2 boxes (8.5 oz each) corn muffin mix
2 large eggs
3/4 cup milk
6 to 8 hotdogs
1 tablespoon sugar
4 to 5 slices american cheese

Preheat oven to 400 degrees.
In a bowl mix muffin mixes, eggs, sugar and milk until well combined.
Melt the butter and grease the casserole dish. 
Put 1/3 of the batter in the bottom of the casserole dish.place whole hotdogs in rows 
about 3/4 inch apart.  Go down sides and if you need to cut the hotdogs to fit. 
Now cover with Cheese and then the rest of the batter. 
Bake 30 to 35 minutes until top has browned well and when you put a toothpick 
in the center it comes out clean. Let it cool 5 minutes before cutting. Serve with ketchup 
and the kids will love you!

Happy Weekend!


Happy Weekend!
It is so fun to make something different for weekends.
And egg baskets are so easy.


Egg Baskets

1 egg per basket
green onions
mushrooms
hash browns
sliced ham
cheese we used sharp and mozzarella 
milk
salt & pepper
and anything else you want
Spray a muffin pan with Pam and line with 2 slices of ham. This becomes your baskets. I whipped 1 egg for every basket. So you can make as many as you need, thats why there are no amounts. This is so easy. Then you add a spoon of hash browns ( I use frozen right from the freezer), mushrooms, eggs, cheese and onions. Bake at 350 for 15 to 20 minutes. Serve on lettuce just to look fancy!
